Basic Muffins

I have been on the search for a good, basic muffin recipe. I have a hard time getting muffins to turn out. They usually end up dry and slightly burnt on the bottom. Yet I press on in the search. I recently received a newsletter in the mail from Organic Valley(with TONS of coupons!) and found this recipe for muffins. I finally have a winner! It makes a thick, heavy dough that bakes in to moist, yummy muffins. I just made the plain recipe, but it would be good with any fruit (blueberries) or a streusel on top. I think I got 18 or so muffins out of this.

Homemade Muffins
3.5 cups flour (I use unbleached)
1/2 cup sugar (mine was a mix of regular and organic)
5 tsp baking powder
1.5 tsp salt
2/3 cup oil (I used canola)
2 eggs
1.5 cups milk
2.5 tbsp sour cream
1 tsp cinnamon

Mix it all together and bake at 375 degrees for 35 minutes.
